The importance of fruits and vegetables in a healthy, nutritious diet is well known, and in recent years, consumers have been urged to consume more of these products.

Regardless of where a food has been produced, people expect that the food they consume will be healthy. Although people could produce their own food by themselves, very few do so.

Therefore, consumers must rely on producers, distributors, processors, and regulators for the safety of the products they consume. Ensuring the quality of a fruit and vegetable product means that a consumer will get a product having confidence that it meets their expectations.

Ensuring the quality and safety of horticultural produce starts from the same moment that the variety is chosen that will meet the expectations of the final consumer and the other actors in the chain, in terms, for example, of taste, nutritional value, texture, post-harvest life, perishability, etc. Safety means that a product will not cause any harm when it is consumed. Quality is the ability of a product to meet customer needs.

Some examples worth understanding better:

• If we sell potato sacks, labeled as 2 pounds but that weigh only 1 ½ pounds, it is not a safety issue but one of quality. Illnesses are not caused if a potato sack weighs too little, but it is going to cause the clients to feel uncomfortable and complain.

• Another example. The brown spots on a banana’s skin can give a poor appearance to the product. But in reality, this is not a safety issue; this is again an issue of quality, since a damaged product’s appearance may suggest to the customer that it is a product that cannot be consumed while its safety is within quality standards.

When we talk about customer requirements, we speak both of the explicit and the implicit. The explicit are those that the customer tells us: I wish the packaging to be of this size, I want this flavor, I want this color for the product.

. The implicit are those characteristics that belong to the product itself.

For example, when someone buys food, it is implicit that you will not get sick. Thus, safety is an implicit characteristic of food and therefore, if you want to offer a quality product, you must ensure its safety.
